Adobo Onigiri with Pickled Garlic

This Adobo Onigiri with Pickled Garlic brings together Japanese comfort and Filipino heritage in one bite. Seasoned sushi rice is shaped around savory adobo and tangy pickled garlic, then wrapped in nori for a delicious, portable snack.

Cook Time: 5 mins (assembly)
Servings: 2-3 onigiri
Ingredients:
2 cups cooked sushi rice
2–3 cloves Pik-A-Pikel pickled garlic, whole or halved
1 tbsp soy sauce
1 tsp vinegar
½ tsp white sugar
1 tbsp fried garlic bits
1 tbsp chicken or pork adobo, flaked or chopped
Nori sheet
Procedure:
Prepare the seasoning.
In a small bowl, mix the soy sauce, vinegar, and sugar until the sugar is fully dissolved.
Season the rice.
Drizzle the soy sauce mixture over the warm rice. Add the fried garlic bits and mix until the rice is evenly coated.
Fill the onigiri mold.
Lightly wet the onigiri mold to prevent sticking. Scoop rice into the bottom half, filling it halfway and spreading it gently.
Add the filling.
Place the pickled garlic and adobo in the center, keeping the filling away from the edges.
Top with more rice.
Add enough rice to fill the mold, pressing lightly to level the surface.
Shape the onigiri.
Place the lid on the mold and press down firmly to compact and shape the rice.
Release the onigiri.
Remove the lid, flip the mold, and gently push the release tab or press from the bottom to pop out the onigiri.
Finish and serve.
Wrap with a strip of nori or serve as is.
