Smoked Fish (Tinapa) Pasta with Pickled Mango

  • 1pc smoked fish (tinapa), medium size, skin off

  • 500g pasta, cooked

  • 8 cloves garlic, minced

  • 2 onion, diced

  • ½ cup olive oil

  • ¼ cup capers

  • 1 tbps atsuete powder

  • parsley leaves, finely chopped for garnish

  • parmesan cheese

  • salt & pepper to taste


  1. Cook the pasta according to the instructions on the packaging. Save the pasta water for later.

  2. Remove the skin, bones and head of the smoked fish. You only need to use its meat.

  3. Put the smoked fish, garlic, onion, atsuete powder and olive oil in a pan.

  4. Put your stove to medium heat and saute for 5 mins. Avoid mashing the smoked fish too much.

  5. Reduce your heat to low then add pasta and pasta water. Mix thoroughly until everything is incorporated together well.

  6. Add parmesan cheese to your liking.

  7. Garnish with parley leaves.

  8. Serve hot and enjoy!
