Ingredients:
Pik-A-Pikel Pickled Mango pickle juice
1 tbsp sugar
2 tsp salt
1 tsp ground black pepper
1 tsp smoked paprika
500g skinless, boneless chicken thigh/breast
1 tsp olive oil, or as needed
Salt and ground black pepper to taste
Pinch paprika, or to taste
1 tsp Honey (optional)
1 tsp Butter (optional)
Procedure:
In a bowl or jar, whisk together pickle juice, sugar, salt, pepper, paprika, and garlic until sugar dissolves.
Submerge the chicken in the brine. Cover and refrigerate for at least 2 hours or overnight for a deeper flavor
Remove chicken from brine, pat dry thoroughly. Season lightly with salt, pepper, and paprika.
Heat oil in a pan over medium-high heat. Sear chicken 5–6 minutes per side until golden and cooked through. Rest for 5 minutes.
Strain remaining brine into the same pan. Add honey and butter (optional). Simmer until thick and glossy.
Return chicken to the pan, coat with glaze. Plate with mango slices and garnish. Serve warm.
