Fried Chicken Tenders in Pickled Mango Chili Sauce

Fried Chicken:
  • 500g boneless chicken fillet

  • 100g all-purpose flour

  • 100g cornstarch

  • 3 tbsp Pik-a-Pikel Pickled Mango Brine (spicy flavor)

  • 1 tsp baking soda

  • 1 tbsp ginger (juice or grated)

  • salt & pepper to taste

Mango Chili Sauce:
  • 100g Pik-a-Pikel Pickled Mango Slices (spicy flavor)

  • ½ cup Pik-a-Pikel Pickled Mango Brine (spicy flavor)

  • 3 tbsp brown sugar

  • 3 tbsp sweet chili sauce

  • salt & pepper to taste


  1. Combine the boneless chicken fillet, 30g cornstarch, ginger, baking soda, salt & pepper, and pickled mango brine.

  2. Mix well until all the chicken fillets are coated and set aside in the fridge for at least 30 minutes (you may also leave it overnight for more flavor).

  3. Combine the flour and remaining cornstarch; season with salt & pepper. Use this to coat the marinated chicken fillets.

  4. Heat oil in a pan and fry the chicken fillets until golden brown on low to medium heat. Fry in batches and do not overcrowd the pan.

  5. When all the chicken is fried, set aside for 5 minutes to drain the excess oil.

  6. In a saucepan, combine the pickled mango brine and slices then let it boil for about a minute. Let it rest for a few minutes.

  7. Blend the pickled mango mixture and sweet chili sauce until smooth.

  8. Add the fried chicken fillets to the sauce mixture, and mix until all the fried chicken is fully coated with sauce.

  9. Serve hot, Enjoy!
