Crunchy, tangy, and oh-so-refreshing - our Pickled Mango Green Salad is the perfect snack for any time of day! 🥗🍴
Ingredients:
5 cups mixed green lettuce
1 x 250g Pik-a-Pikel® pickled green mango
1/4 red onion, thinly sliced
green olives, halved
black olives, halved
capers
Dressing:
1/8 cup Dijon mustard
¼ cup honey
¼ cup apple cider vinegar
Salt to taste
¼ teaspoon black pepper
¼ cup extra virgin olive oil
1/8 cup mayonnaise
Procedure for cooking:
Wash the mixed green lettuce over running water and spin dry to remove excess water
Combine all the dressing ingredients in a blender and blend it for about 3 seconds to mix thoroughly
Open a bottle (250g) of Pik-a-Pikel® pickled mango and drain the mangoes. Slice the pickled mangoes in cubes
In a large bowl, combine the mixed green lettuce, diced pickled mango, thinly sliced onion, green and black olives, and capers and toss to combine
Just before serving, add the dressing to taste and toss to combine.
